TAY SON "GIÉ BEEF"
Gíe Beef is a dish of the Bana ethnic group in the highlands of An Khe and Vinh Thanh districts. Through contact, this dish was found to be appetizing by the plains, so it was developed in the Kinh community in Tay Son - Binh Dinh.
Beef jerky is a dish made mainly from the small intestine of cows. When slaughtering cows, choose the best small intestine, fresh, inside the intestines still have clear green mucus called joe. The intestines must be fresh so that this substance does not smell, it can be used. Drain the seeds in the small intestine, keep the intestines separate. Marinate salt, pepper, onion, minced garlic in the bean for ten minutes to infuse. Then heat the oil, sauté the onions until fragrant, add the marinated jaggery and stir-fry until cooked. Pour in fresh coconut water, boil for about 15 minutes, skim off the foam, let cool to get clear water.
Small intestine, beef liver cut into pieces or squares, marinated with onions, garlic, salt and pepper. Fry in hot oil and stir-fry until the liver and intestines become fragrant, then let cool. When the cow's blood is freshly cut, it's boiled. Locals often put a piece of banana leaf on the bottom of the pot to prevent it from getting burned. Blood is also cut into pieces of liver. All the above ingredients are put in a pot with water.
